According to David Lecomte of City Winery, the fabulous wine/music/food venue opening in Chicago next week, wines on tap are more unique, more environmentally friendly, and lower stress (wine in a bottle can go bad in myriad ways). Everybody wins. “Basically our wines are closer to their true nature—raw,” Lecomte says on the City Winery blog. “This system also offers a unique experience for our guests…We can take risks others cannot. We can offer one keg of unique wine if it is tasting great on a given week. We can offer a wine at different stages of its life. We can serve our wine fresh and alive since we don’t have to stabilize them for shipment across the continent.”
